To be honest I'm not going to rush to open the box again, getting the case back on was a pain the bum and I am sure next time I will break something. I do however have the old Pace drive which I can use to initialise a bigger disk at any time. Also noticed that someone is selling a 2TB on eBay for £165 so it's probably not worth the hassle to do it myself.

Your profile suggests that you have Sky Basic, so I wasn't too sure about which STB you actually have. My knowledge of the Sky+ STBs is a little low.
The 2TB drives are only SATA as far as I can tell. If you have a Sky+ HD STB, then this is fine. Just make sure it is suitable for the STB (i.e. PVR or AV) as drives for PCs actually are slightly different.
Also I wasn't sure if the 2TB works in the Pace Sky+ HD STB. Double check the upgrade options in this thread:

Personally I would upgrade sooner, rather than later. This way if you can;t use Copy+ to copy your programs to the new drive, nothing is lost. This will be the case once Darwin is installed (another new update released this coming week for the Pace HD STB).

Have updated my profile to say Sky HD. It was thanks to your site that I found the instructions on dismantling the Pace box. Unfortunately it's harder to put it back together again. By the way, why won't Copy+ work with Darwin? Is it unfixable?

It should be fixable, once the boffins who contribute to the Copy+ site have cracked the coding for the new file system.
