Ok, if it's uncapped, wouldn't that be reflected in the MySky connection details page? There, it says my line is set to 4096/800.

That'll just likely show what DLM profiled it to. It won't reflect manual re-profiles made.

Here we go, just reproduced my stats. Test socket, Sky router, decent filter.

That's the bit that surprised me; "set to" an upload speed of 4.9mbps sort of implies a cap?
Another forum I posted on for some help has suggested that with a noise margin of 7.1dB and a target of 7dB, the modem is selecting a lower sync in order to make sure it can achieve its target SNR, and that my line is just too noisy and there's nothing I can do about it.
Any thoughts? I'd like them to set it to 10240/800 and maybe just see what happens. Or is there a time of day where the SNR's likely to be better and I could resync and see what happens?

If Sky sent an e-mail and confirmed that the line is already set to 10240/800, then I'd go by that rather than what your MySky suggests. If you want to call up to confirm what the line is set to, then go for it, but it'll probably be a waste of time in regards to improving anything.
Target SNR is 7dB. If the line is uncapped to 10240/800 adsl2plus, provided there isn't high INP on the line (which it will only be 1symbol anyway with that profile), you're getting as much as possible.
