I've acquired a new Airport Express. What is the recommended option for using with the Sky hub?:
1. create a wireless network - obviously this is in addition the existing Sky wifi network.
2. Extend a wireless network3. join a wireless network
Any advice much appreciated

depends what you want to do. you can use this router to replace the sky hub/router altogether and connect it directly to the BTO modem. follow the guide here to do so.
or you can add hang the router off the back of the sky hub/router. to do this set the airport in bridge mode under network and under wireless create a wireless network and set that up (click wireless options to turn on the 5GHz channel)AirPort Extreme + Sky Fibre Guide | Mac OSX Automator for xDSL stats for HG612 & Vigor 130

setting it to automatic is fine and will work but you may have others around you that could be using the same channel which will cause interference. it may be worth installing inssider to find the least cluttered channel in your area and use that.
you are correct when you enable the 5GHz channel it creates 2 networks. myself i have this enabled and only use the AE as the wireless access point (macbook, iPad & tv connect @ 5GHz and everything else at 2.4GHz). the wireless on my other router is turned off.AirPort Extreme + Sky Fibre Guide | Mac OSX Automator for xDSL stats for HG612 & Vigor 130
