Note that two different types of cable have been used (especially noticeable on the green, one is lime green the other bluey green) which may help you find what goes where.

Re: Where is my master socket?

I confirmed that the downstairs NTE5 is my 'master' socket (or at least the socket I have access to that's closest to the incoming BT line); take all three wires out of terminal two at upstairs landing and all except the downstairs NTE5 are dead. So I'll just need to wait until I get some remodelling done on the house to find where the whereabouts of the phone line spur/junction box to upstairs.
