Yes you can use your Sky router's log in details too. However in the 'normal' way, not using Opt.#61. Opt.#60 & 61 are specifically required for SFU & SFUP connections.
Sorry, maybe I am confused, Options60 or 61 are not available under either PPPoA or Bridging connections, only for VDSL (Fibre)

In the 'normal' sections where you are asked for the username and password, use the details that you extracted from your Sky router.

      Use:
      Encapsulation: PPPoA
      Multiplexing Method: VC-BASED
      VPI: 0
      VCI: 38

Sky Fibre Unlimited Pro: Connected at 80,000 kbps / 20,000 kbps
Previous ADSL2+ Speed 19999 kbps 1153 kbps, Line Attenuation 17.5 db 6.9 db, Noise Margin 7.5 dB 8.7 dB
      Speedtest: 17.15MB/s 0.97Mb/s Ping 31 ms

Thanks that's exactly what I have done. Back to my question, does sky try to login to their router to check settings or am I good to connect my own router for the initial 10 days testing?

Your own router should be OK but if you have problems with the connection you will need to plug in the Sky router. DLM works on the line, not the router.
